I'm not a huge gingerbread fan, but I used this recipe, and these were really good! They don't use molasses, so they probably aren't considered real gingerbread cookies. But they were perfect for us...a very mild gingerbread taste. The secret ingredient is butterscotch pudding mix! The dough was super easy to work with, and for my first time making gingerbread, these cookies were a big success.
